Are visions of sugarplums dancing in your head? Have you always dreamed of making a real Gingerbread house with your children? What a great holiday tradition and what fun! But, what a project! So go into it with your eyes wide open and remember planning, preparation and plenty of patience will make it a memorable occasion. Check your favorite cookbook for the recipe or go to Christmasrecipes.com and print or save a copy. Not quite that ambitious? Not to worry, there are gingerbread kits available at local grocery and department stores that simplify the entire process and still provide a fun, family activity. Cooking with kids can be a lot of fun, and some of our favorite holiday recipes have become an annual tradition for our family. If you have a family favorite cookie that you make only at the holiday, make it a family affair, set aside the entire afternoon, organize the ingredients and gather the entire family. Diabetic-Lifestyle offers recipes, menus, medical updates, entertaining - practical information enhances life while managing diabetes on a daily basis. - Home Sugar and Sugar Substitutes in Your Holiday Cooking One of the most frequent questions we get on this website is "Why have you used sugar in your diabetic recipes?" or "Since I now have diabetes, that means no sugar. Right?" As we reported earlier this year when the American Diabetes Association published their latest dietary guidelines, table sugar and other forms of sweeteners (honey, molasses, brown sugar, etc.) can be included as part of a diabetes meal plan. What's important is that you keep close track of your total grams of carbohydrate every day. Sugar provides sweetness, tenderness, and color in baking. With most recipes, you can reduce the sugar by at least one-third without changing the taste and texture. Fruit juices and frozen fruit juice concentrates may be used to sweeten baked goods. Since these baked goods are high in carbohydrate, it important to eat these treats in moderation and to count every gram of carbohydrate, not exceeding your recommended total for that meal. Holiday Cooking: Beef Tenderloin with Bernaise Sauce
Here is a delicious, quick holiday main course. This recipe was given to me by neighbors for the main course of a festive progressive dinner. It was super easy and tasted wonderful. This recipe served eight (8) people perfectly with virtually no leftovers. The meat was done "medium" to "medium-well".
NOTE: If you are concerned about leaving the meat in the oven for a long period, follow heating and cooking times found in most standard cookbooks. Ingredients:
4lb beef tenderloin, excess fat trimmed.
2 pkgs of Bernaise Sauce mix (any brand)
Additional ingredients may vary depending on brand selected.
I needed additional butter (or margarine) and milk.
olive oil
seasoned salt
pepper
Directions:
Pre-heat oven to 500-550 deg F (your highest setting). Place meat in pan with a little water to prevent scorching. Brush meat with olive oil. Sprinkle with seasoned salt and pepper. Cook meat, uncovered for 20 minutes. Turn off the oven, but do not open the oven door. Leave meat in the oven. At this point, I went to the beginning of the progressive dinner down the street for about an hour and a half.

    2 large recipes, baked cornbread
    1/2 loaf crumbled light bread
    2 cups chopped celery
    2 large chopped onions
    2 cups chopped scallons
    6-8 boiled eggs chopped
    2 large cans cream of mushroom soup
    6 - 8 cups chicken or turkey broth (more or less if needed)
    save out 1/2 cup for gravey.
    Mix all ingrediants until smooth, if not of creamy constancy add water to make it very easy to stir. Put in large baking pan or dish bake until lightly brown on top. Giblet gravy~~ 4 cups chicken or turkey broth, bring to rolling boil add 1 chopped already boiled egg, the 1/2 cup of dressing you saved. In a pint fruit jar add 3-4 tab. plain flour and cold water to 1/2 filled the jar. Put lid on shake well , while gravey liquid is in rolling boil add the flour mixture slowly stiring constantly until begins to thicken. turn off fire. cover. just before serving check that

    Yield: 24 Latkes
    3 tsp. Vegetable oil 2 pounds Russet potatoes, peeled 3/4 cup Red onion, finely chopped (1 onion) 3/4 cup Flour, all-purpose Egg, large Egg white, large, beaten lightly 1 tsp Salt 1/4 tsp Pepper Set oven racks at middle and lower positions and preheat oven to 450 F. Prepare 2 baking sheets by brushing each one with 1 tsp. of oil. Using a hand grater, or with the shredding blade of a food processor, grate potatoes. Place in a large mixing bowl and add onions, flout, salt, and pepper; mix well. Add egg, egg whites, and remaining 1 tsp oil. Toss to mix Drop rounded tablespoonfuls onto prepared baking sheets and press lightly to form cakes. Bake for 10 minutes, or until golden brown on the bottom. Turn the latkes over, switch positions of the baking sheets and bake for about 5 minutes or until golden brown

    Lowe's Home Safety Council's vision is safer American homes and fewer preventable injuries. Survey Reveals that Homeowners Need a Lesson in Cooking Safety
    More than half (53 percent) of all Americans admitted they walk away from the kitchen while cooking. And considering the fact that unattended cooking tops the list of home fire causes, that's not good. Here are some tips to keep in mind. As Americans across the country prepare their holiday feasts, many are unaware of the avoidable hazards involved in this seemingly simple task. According to a survey conducted by Lowe's Home Safety Council, 53 percent of Americans admit they leave cooking pots and pans unattended. "According to the National Fire Protection Association (NFPA) the leading cause of home fires in the U.S. is unattended cooking," explains David Oliver, executive director of Lowe's Home Safety Council. "When cooking on an oven range, always stay in the kitchen to monitor the food preparation. Never leave an open flame unattended, even if it's on your stove."
    • Have a general-purpose fire extinguisher in the kitchen - and make sure adults know how to use it
    • Extinguish grease fires by sliding a pot lid or larger pan over the fire, turning the burner off and leaving the fire alone until the pot cools.

So go into it with your eyes wide open and remember planning, preparation and plenty of patience will make it a memorable occasion. Check your favorite cookbook for the recipe or go to Christmasrecipes.com and print or save a copy. Not quite that ambitious? Not to worry, there are gingerbread kits available at local grocery and department stores that simplify the entire process and still provide a fun, family activity. Cooking with kids can be a lot of fun, and some of our favorite holiday recipes have become an annual tradition for our family. If you have a family favorite cookie that you make only at the holiday, make it a family affair, set aside the entire afternoon, organize the ingredients and gather the entire family. Add some holiday music to the mix and make an extra big batch so there is plenty to eat and share.
