    1/4 cup red or green pepper, chopped
    1/4 cup pineapple chunks, drained
    1/4 cup shredded cheese
    1 tablespoon spaghetti sauce or tomato paste
    sprinke of oregano Spread tomato sauce on pita. Top with peppers, pineapple and cheese. Sprinkle with oregano. Heat in toaster oven or regular oven for 5 minutes at 400 degrees F. Makes 1 pita pizza. A-Mazing Fruitland Kabobs 1 tangerine
    1 apple
    1 banana
    small cluster of grapes Divide tangerine in sections. Slice apple and banana. Remove grapes from stem. Arrange fruit on 4 wooden sticks. Makes 4 kabobs. Orange Juice Falls' Frostie Sticks
    1 cup orange or apple juice
    1 cup cranberry juice Combine juices, pour mixture into four paper cups. Cover with foil. Insert a popsicle stick in each; freeze. Makes 4 frostie sticks.

    Recipes for Healthy Snacks Open Harvest on TV F Street Recreation Center has received a Family Foods Initiative grant to create nutrition and cooking programs. This grant is designed to provide education by utilizing our community access TV station, 5City TV. Open Harvest is supporting this project by providing in-kind grant contributions of instructional cooking classes. Programs on Healthy Snacks and Soyfoods were taped in July 2002 at the new F Street facility. Recipes featured on these programs are below. Spicy Tofu Cubes 1 pound firm tofu packed in water
    ¼ cup soy sauce
    1 tablespoon soybean or canola oil Drain tofu. Press out extra water with paper towels. Cut into cubes. Put in a bowl. Pour the soy sauce on top. Carefully toss tofu until it is all covered with soy sauce. Spread the oil on cookie sheet. Preheat the oven to 375 degrees. When the oven is ready, put the tofu on the pan and put in the oven for 10 minutes. Use a spatula to turn the tofu over. Bake 10 more minutes. Serve. This is good reheated or in stir-fries. Quesadillas ½ cup instant refried beans
    ½ cup boiling water
    1 cup shredded cheddar or co-jack cheese
    2 tablespoons salsa
    6 tortillas Preheat oven to 350 degrees. Mix beans and boiling water in a bowl. Cover and let sit 5 minutes. Stir in salsa. Spread over 3 tortillas. Spread cheese over other 3 tortillas. Place all tortillas on baking sheets. Bake 5 to 8 minutes or until cheese melts. Take out of oven and slap them together. Cut each into 6 pieces. Serve.

If those were the last five foods on earth, my Monkey Girl would not starve. Even if there were five million foods on earth, those would be the only five foods she'd want to eat. As a mom who cares about her daughter; I was excited when Redlass offered to send me a copy of Healthy Snacks for Kids by Penny Warner to review. I looked forward to a book full of healthy, kid-friendly recipes with great illustrations to help me decide on the best food. That was not the book I got. Cover Yes, I know I'll be thrown out of the book grump guild for even mentioning this; however, you need to be warned.
