National Historic Oregon Trail Interpretive Center Ore gon Trail History Material Culture of the Overland Emigrants Kitchen Implements and Storage Items Emigrants carried a variety of cooking utensils and storage items on the Trail. Almost every emigrant had some sort of kitchen implements for cooking and eating, although some owned only a few basic items. Almost all had some kind of storage item as well, either for food products or for other possessions they brought. The types of storage materials used depended on what articles were brought and on how much money the emigrants could spend. Kitchen implements ranged from a few different types of dishes, silverware, various stoves, pots and kettles, churns, skillets, pans and more. For most American women, cooking was the center of their days. As diets changed in the 1800’s, the time it took to cook meals increased. Women acquired more cooking utensils during the 1800’s, but they remained as bulky and large as before. The quantity of kitchen equipment also depended on a family’s wealth, and the more tools one had, the easier the job became. Cooking was considered to be an art that women had to master, as was quilting and sewing (Larkin, 29-30). While on the Trail, women had to adjust their kitchen routines to the wagon. Wagons on the Trail were considered “mobile pantries,” in which women packed their favorite cooking items, but changed their cooking methods. It was necessary to know how to cook on the Trail. “Baking bread and pies over an open fire was different from baking in a brick oven or in the new stoves that were just becoming popular. …And boiling and baking in heavy cast-iron Dutch ovens and spiders were changes from baking with pottery dishes…. …Choosing the best utensils, heat source, and cooking methods would be of key importance to the overlanders in their constant struggle to prepare two or three meals a day” (Williams, 79).

The Magnificent Oregon Trail
Among the 16 books we offer here that concern the Oregon Trail, foremost for researchers are the direct transcriptions of six original diaries of pioneers who sought new homes and lives in the west. Editor Bert Webber did not change anything, but only inserts parenthetical clarifications where needed. To better see what the diarists were writing about, photographs of prime geological sites the pioneers mention have been added. Each diary is provided with a map, bibliography, index and some have genealogies. Three diaries by women, three by men. (The Beeson diary is especially interesting: written by a teenager getting ready for the trip, the trip itself, and then getting settled in Oregon. The "getting ready" is seldom found in overland diaries, thus making Beeson a unique and significant find.)

The mission will be accomplished by effectively developing the students' abilities to process information and to research specific topics, using a variety of formats.
