    An African-American Celebration
    of Culture and Cooking by Eric V. Copage
    By Marilyn Helton K wanzaa is an African-American holiday which is held from December 26th through January 1st, and climaxes with a glorious feast. It was started in 1966 by Dr. Maulana Karenga, Professor at the California State University, Long Beach, California. Karenga wished to emphasize that black Americans come from many parts of Africa, so he brought together elements from many African harvest festivals to create Kwanzaa, a unique celebration that is now observed in some way by more than 5 million Americans. O n each day of Kwanzaa, a family member lights a candle, then discusses one of the following seven principles of African-American unity:

    Cook traditional dishes for the AfricanAmerican celebration, including sweet-potato pie, southern-fried okra, and vegetarian African stew. over surface of pie.Rotating midway through cooking microwave on 70 % (medium high) 6 to until crisp browned, spraying stirring twice during cooking. Should take 30 minutes.

    Sweet Potato Pie 2 c Sweet potatoes, drained 4 T Margarine,melted 3 Eggs 1 c Sugar 1 tsp Cinnamon 1/4 tsp Grated nutmeg 3/4 c Milk 1 tsp Vanilla 1 9" pie shell, baked 1/4 c Chopped pecans Use a food processor or fork to mash sweet potatoes together with melted margarine.Blend in eggs,sugar,cinnamon and nutmeg. Add milk and vanilla.Pour mixture into baked pie shell.Microwave on 70% (medium high) 7 minutes. Sprinkle pecans over surface of pie.Rotating midway through cooking,microwave on 70 % (medium high) 6 to 8 minutes or until center no longer jiggles. If you prefer, you can bake it in the oven at 375 degrees for about 35-45 minutes or until it doesn't jiggle. Yield: 8 servings
    Grandmother's Southern Fried Okra Heat oil in 10 inch skillet over med. heat until hot. Oil is ready when dash of cornmeal sizzles.
    Spoon mixture evenly in skillet. Reduce heat to med low. Cover and fry till underside golden brown, 10-15 minutes. Then invert on plate and slide otherside up into skillet and cook uncovered 5-8 min until golden brown. Remove from skillet to paper towels to drain excess oil. Serve hot.

Stay here Kwanzaa: Soul Food Celebration Kwanzaa, celebrated by some African Americans, is a holiday which has gained in popularity in recent years. It came out of the ‘60s cultural revolution that set off an interest in African history, music, art and a growing sense of black consciousness. Kwanzaa, which means "first fruits of the harvest," is celebrated for seven days from December 26 through January 1. It is a cultural, rather than religious, holiday. Each day is celebrated, generally by a gathering of family and friends. Participants discuss and commit to seven guiding principles, one each day. A candle is lighted each day. The first day starts with a black candle–it represents African American people in unity. The next six days alternate between lighting a red candle, representing struggle, and a green candle, representing a "green future." Visit our online shopping affiliates A Calendar noting important Holiday dates, facts & fun from "The History Channel" Many local centers need donations of food items and/or volunteers to help gather, serve, drive and other jobs as needed. Food items generally need to be non-perishable: canned goods, stuffing and/or mashed potato mix, cranberry sauce, cereal, etc. Some places will gladly accept monetary donations to buy larger or perishable items to distribute. The Dr. Martin Luther King, Jr. Community Center The RI Community Food Bank ECHO (Ecumenical Help and Outreach) is an all volunteer agency that gives rides to elderly and infirm patients so they can make their medical appointments. Helpers are needed to answer the phone, set up rides and work with volunteer drivers. Hours are Monday to Friday from 9am to 1pm, training is provided. Volunteers can work on a weekly, monthly or substitute basis. For more information call Mary Lou Proffett at 253-6353 or Mary Clair at 253-3351. Special Olympics has a program called "Recycle for Gold".
