Chili Beans?... Self-appointed purists may turn up their noses when the word bean is used in conjunction with chili. "After all," they say, "real chili is made, like Texas Red, without beans." Well, Texas Red may be considered by some to be real chili, but I like chili beans and that nakes it real chili to me! I like the rich, deep flavor of the different chilies but if it brings tears to my eyes then it is just too hot. I don't like that. A little zing to waken the togue is good but fire that numbs the mouth is just too much. We can probably agree that the appreciation of chili, either with or without beans, warm with chili peppers or a roaring fire, is entirely a subjective matter. The neophyte chili eater would probably find even a mild chili very hot while the old hand at chili would relish in comfort a chili that would melt most other mouths. Herein lies the problem with making the perfect chili - it would only be perfect for the maker and not exactly right for everyone else. The best that you can expect to make with this long-historied dish is a good compromise. The story is told that the cattle drovers, tired of the same old beef steak every night, played with the local spices and herbs and that their concoctions became chili. As the story goes, it would seem that the drovers butchered cattle as they went to supply all of their meat needs. I find it hard to believe that the owner of the cattle would approve of supplying beef

Chicken wings - 2 pounds
Low fat butter - 4 tablespoons
Hot pepper sauce - 3 to 5 tablespoons
White wine vinegar - 1 tablespoon
Celery - 2 stalks (julienne) Blue cheese salad dressing - 1 cup Salt and pepper Oil for deep frying

Hot n' Spicy Cod Steaks
Serves 4 Ingredients:

4x150g/5oz cod steaks
2 tablespoons polyunsaturated oil
50g/2oz onion, sliced
100ml/4fl.oz fish stock
225g/8oz chopped tinned tomatoes
50g/2oz apples
25g/1oz raisins or sultanas
50g/2oz banana, sliced
50g/2oz courgette, sliced
Fresh basil leaves, chopped Black peppercorns, crushed Juice and rind of 1 orange Juice and rind of one lemon Method Heat 1 tablespoon oil, add onions, cook, add curry powder and cook for 3-4 minutes. Add flour and tomato paste, cook through. Add stock, bring to the boil and simmer. Add chopped tomatoes. Dice apples and soak in the rind and juice of the orange with the bananas and raisins and sultanas. For a complete meal serve with brown rice. Garnish with basil leaves. Taco sauce (optional) Makes 6 to 8 servings. Directions Cut jalapeno peppers into 1-inch thick pieces. Remove seeds, if desired. Form a 1-1/2-inch ball of ground beef around each jalapeno chunk. Using metal skewers, skewer the meatballs so the skewer pierces the pepper and holds the meat in place. Grill 18 to 20 minutes or until well done, turning skewers every 5 minutes. (If you use a gas grill, use high heat. On a charcoal grill, place the meat 4 to 6 inches from hot coals.) If you are adventurous, for even hotter meatballs, baste with taco sauce during last 5 minutes of cooking. Chinese Hot and Spicy Chicken (Ma La Tze Gee) - Hunan Serving Size : 1
  • 4 tablespoons Oil
  • 1 Scallion
  • 2 To 3 hot peppers
  • 1 tablespoon Shredded ginger
  • 1 tablespoon Sherry
  • 2 tablespoons Light soy sauce
  • 2 pounds Fryer
  • 1/2 cup Chicken broth
  • 1 tablespoon Light soy sauce
  • 2 tablespoons Wine vinegar
  • 1 tablespoon Sugar
  • 1/2 teaspoon Salt
  • 1 To 2 teaspoons anise pepper
  • 1 tablespoon Cornstarch
Cut chicken into bite-sized pieces, marinate 15-20 minutes in ginger, sherry, soy sauce mixture.
Cut scallion and hot peppers diagonally into 1-inch pieces. Grind anise pepper to powder. Mix chicken broth, soy sauce, wine vinegar, sugar, salt and pepper.
Heat oil. Add scallion, and stir fry several times. Add ginger, sherry, soy mixture and chicken to scallions and hot pepper, and stir-fry for 1-2 minutes more. Add chicken broth mixture, mix well. Cook over low heat until chicken pieces are tender. Add cornstarch to thicken. Serve.

3-pound rack Spare Ribs

2 tablespoons butter or margarine
1 medium onion, finely chopped
2 cloves garlic, minced 1 15-ounce can tomato sauce 2/3 cup cider vinegar 2/3 cup firmly-packed brown sugar 2 tablespoons chili powder 1 tablespoon prepared mustard 1/2 teaspoon pepper Get your Spare Ribs here! more info... Directions: Servings: 3 Preparation Time: 20 minutes Cooking Time: 75 minutes Melt butter in a large skillet over low heat; add onion and garlic, and saute until tender. Add remaining ingredients, except ribs, and bring to a boil. Reduce heat, and simmer for 20 minutes, stirring occasionally. Place ribs on grill, meatiest side down, about 6 inches above low coals, or over indirect heat (banked coals). Close grill hood. Cook for 20 minutes; turn. Cook for 45 minutes.   • 1/2 cup chunky peanut butter 1/2 cup chicken or vegetable stock 3 tbsp light soy sauce 3 tbsp sesame oil 2 tbsp hot chili paste or oil (or hot pepper sauce) 1 tbsp granulated sugar 1 tbsp minced gingerroot 1 tbsp Chinese black vinegar or Worcestershire sauce 2 large cloves garlic, minced 2 teaspoons rice wine vinegar

  • SPICY PEANUT DRESSING: In bowl, whisk together peanut butter, stock, soy sauce, sesame oil, hot chili paste, sugar, ginger, black vinegar, garlic and rice vinegar. (Make-ahead: Cover and refrigerate for up to 1 week.) Pull off and discard roots from bean sprouts, if desired. Immerse carrots in large pot of boiling salted water for 30 seconds. With wide skimmer or tongs, transfer to colander; chill under cold water. Drain, shake off excess water and set aside on towel-lined tray. Repeat with sprouts, blanching for 5 seconds.
