GREEN CHICKEN CURRY Onion , chopped 4 cloves Garlic , chopped 1 bunch Coriander with roots 1 bunch Basil 20g packet Thai Curry mix 3 tbs Oil 500g Chicken thigh fillets, sliced 400ml can Coconut Cream 2 tbs Lemon Juice and 1 tbs of oil in a food processor. Process to a paste. Place half the paste in an airtight container. Freeze for later use. Heat remaining oil in a frying pan. Cook remaining paste until fragrant. Add chicken. Cook, stirring, for 5 minutes. Blend in coconut cream, lemon juice and fish sauce. Simmer, uncovered, for 10 to 15 minutes or until chicken is tender. Sprinkle with remaining chopped coriander. Serve with rice. Top with sliced fresh chilli for extra bite, if desired. Serves 4 Source : Country Kitchen. Hot and Spicy Cookbook SPICY CHICKEN WITH EGGPLANT 1.5kg Chicken half-breasts with bone salt and ground pepper to taste Onion , finely chopped 2 cloves Garlic , crushed Eggplants , cut into cubes 250g Green Beans, topped, tailed and cut in half 1/2 tsp Turmeric 1/2 tsp Curry Powder 1/2 tsp Ground Ginger 1/2 cup Chicken Stock 1 cup Tomato Puree You may have to do this in several batches.

Spicy Chantaboon Rice Noodle Soup
    Thai Coconut chicken soup Hey you two melted Here is a great hot weather recipe....HOT SOUP! And if you think I am kidding, I'm not...it really cools you down, which is why so many really spicy hot recipes come from the tropics.
  • 1 can coconut milk
  • 2 cups chicken stock(homemade if possible)
  • 2 habs, seeded and chopped
  • 2 serrannos, seeded and chopped
  • 2 jalapenos, seeded and chopped
  • 3 cloves of garlic...(seeded and chopped?) didnt wanna ruin the mold
  • 1 good knob of fresh ginger..chopped(leave seeds in!)
  • 1/2 red bell pepper
  • 1/2 green bell pepper...both sliced into 2 inch long thin slices
  • 1 red onion, chopped fine
  • 1 tbls or more of fish sauce( I used 2 glugs)
  • 1 tbls brown sugar
  • 2 tbls peanut oil
  • 1 block of tofu, weighted, and cut up after a lot of the water out Put all the chopped peppers, garlic, onion, and ginger into a good sized pot, that has been heated with the oil, and simmer for a few minuits, add the chicken stock and the coconut milk, and bring to just below the boil...do NOT let it boil, just simmer for about ten minuits then add the tofu, cut into about one inch cubes, add the fish soy (nam pla) and the sugar and taste...probably add more salt, and if you want it really hot add a little red chile paste...garnish with cilantro chopped into it just before serving...this is fast, hot, and tastes terrific..I put this recipe together from a couple of others in two different Thai books, one of them called for chicken thighs chopped into it, which could also be done..hope you enjoy it as much as we do...Cheers, Doug in BC

INGREDIENTS:
3 Tbl. low sodium soy sauce
1 Tbl. cornstarch
1 Tbl. rice vinegar
1 Tbl. minced, peeled fresh ginger 1/4 tsp. crushed red pepper 1 pound shrimp 1 cup coarsly chopped green onions 1 Tbl. minced, peeled fresh ginger 3 cloves minced garlic 3/4 cup sliced red bell peppers 3/4 cup sliced yellow bell peppers 2 Tbl. fresh lemon juice 1/2 tsp. white pepper 1/4 tsp. salt 4 cups hot, cooked rice COOKING INSTRUCTIONS: 1. Combine first five ingredients in a medium bowl, add shrimp. 2. Cover and marinate in refrigerator for 30-minutes. 3. Heat oil in a large non-stick skillet over medium heat; add onions, ginger and garlic. Saute one minute stirring constantly. 4. Add shrimp mixture, and saute two minutes. 5. Stir in bell peppers, lemon juice, white pepper, and salt. Cook 1 1/2 minutes or until shrimp is done. Serve over rice. Red Pepper Sour Cream Sauce 3 red bell peppers, roasted
1-2 jalapeno peppers, (to taste) roasted
1/2 cup sour cream
1/2 tsp. sugar Peppers should be roasted and peeled. Place bell and jalapeno
peppers in food processor bowl fitted with steel blade or in a
blender container; cover and process until well blended. Stir
in sour cream and sugar. Makes about 2 cups of sauce. Jalapeno Cheese Balls 1 egg
1/2 cup softened butter
3-4 fresh jalapenos, very finely chopped
1/4 cup onion, very finely chopped 1 cup processed cheese spread (i.e. cheez whiz) 1 tsp chili powder 2 tsp. baking powder 2 cups flour Preheat oven to 350. Beat egg, add remaining ingredients to egg in the order given. Roll into 1 inch balls, place on lightly greased baking pan and bake 10-12 minutes or until golden on the bottom. Remove to cake racks and sprinkle with chili powder while still hot. Makes about 24. Blistering Habanero BBQ Sauce Makes sauce for apprx. 4 lbs. chicken wings. 1 1/8 cup barbecue sauce, prepared 1/4 cup TABASCO brand Habanero Pepper Sauce Combine barbecue sauce and Habanero Pepper Sauce.
