Z MANY of the plants we grow such as annuals, perennials, shrubs and trees are herbs in the true sense of the word. With increased interest in recent years in continental or gourmet cooking the word "herb" is nearly always thought of by home gardeners to mean the "culinary" herb. The Herb Garden The herbs I have grown are listed below with instructions for growing them. Perhaps inexperienced gardeners as well as those who have not yet had the pleasure of growing these interesting plants will give some thought to starting a small herb garden. Even a small plot 4 by 6 feet will grow all a small family would need. If not grown for use in cooking, herbs are worth growing for pleasant aromatic foliage and some of them for the beauty of the flowers as well. Herbs can be used fresh for garnish in salads and to perk up the flavors of bland vegetables or to add flavor to meats and stews in which case one needs only to nip off a few leaves when wanted.

Herb Gardening
An herb garden can be as simple as a few pots of chives, mints, and basils at the edge of a sunny patio or balcony. The important thing in to know now about herbs is that they are not very demanding and will do well in ordinary soil as long as they have good drainage and at least a half day of sun. The majority will thrive in soil that is neutral to slightly basic and not very fertile. In fact, herbs will be more aromatic and flavorful if the soil is somewhat poor in nutrients. But well drained soil is important if your soil is compacted or heavy clay. Improve drainage by adding compost, perlite, or vermiculite. Better yet, add some of each and work them into the soil to the depth of about a foot.
Hints on Mints
The true mints are zesty perennials of several characteristic flavors and scents that are notorious for their usually rampant growth. They often will climb out of their appointed beds and appear in other garden areas where they may be less than welcome. They spread by roots and runners and also are able to start rootless wherever the stems touch the ground. Label them well and plant them in containers or beds that have barriers. Regular stem and root pruning will help keep mints from spreading. Don't let this invasive habit keep you from growing the mints. They are among the most flavorful herbs. Lemonade, iced teas, and the famous mint Julep would be sad potions, indeed, without mint.

Introduction
What is an "herb"? The term itself comes from the Latin, "herba," meaning green crops. It originally referred to virtually all plants, cultivated and wild, and especially to their green and succulent parts. Today, the term has two distinct meanings. To the botanist, an herb is a non-woody plant that dies back to the ground in winter, hence "herbaceous." Herb is also used widely to mean any plant, or part derived from it, that has or once had useful properties beyond garden ornament. At the National Herb Garden at the U.S. National Arboretum, for instance, herb is defined broadly to mean just about any plant except vegetables, grains for food or forage, or plants used only to beautify the garden.

An herb garden can be a place of enchantment on a summers day. You can watch the hummingbirds feeding on the bright-red bergamot flowers, bees sipping nectar from the pale pink thyme blossoms, inhale the fragrance of mints and lavender and delight in the butterflies dancing around the echinacea.
These are the simple pleasures that my visitors see that entice them enough to start their own herb garden. Then they are hooked when I show them the many other rewards of herb gardening. The herbal wreath on my front door, the dried herb arrangements scattered around our home, the assorted herbal vinegars lined up across the kitchen counter, the way my sheets smell of lavender from the linen closet and not to mention the fresh herbs I use in my cooking.
Then comes the question... "How do I start one of my own?" I will try my best to give a good start here. Please feel free to email me if you have specific questions. I will do my best to find out. Wormwood: the Gothic Herb
ormwood can be used to denote an entire family of plants, the Artemisias, but the "true" wormwood is Artemisia absinthium . Artemisia is derived from Artemis, the Greek goddess associated with the moon, and absinthium means "without sweetness". The plant itself is easy to grow, and its silvery gray-green foliage glows in the moonlight. It's a perfect addition to the Night Garden Wormwood has had a long (and sometimes unhappy) relationship with man. The first mention of the herb is in the Ebers papyrus, a medical document dating to 1550 B.C. The Egyptians used it as a vermifuge, as did many later cultures, and the name "wormwood" may refer to this property of ridding the body of worms. The name might also be a corruption of the German "vermut", which means 'preserver of the mind'referring to its other well-known property of altering mental states. While wormwood has had useful medical applications, its symbolic association is with bitterness of spirit. An ancient legend involving another Artemis, Queen Artemis of Caria, provides perhaps the earliest correlation. When Artemis' husband, King Mausolus, disappeared, she sent searchers looking for him everywhere, but he was nowhere to be found. She assumed he was dead, and started to build a great monument to him. Although Mausolos did return, he was buried in that tomb (one of the wonders of the ancient world) and gave us the term mausoleum, and Artemis became associated with grief, bitterness, and absence (absinthe....).

Preserving Herbs
The shelf life of many herbs is one to two years but this period is shorter when herbs are exposed to light, heat and open air. Herb leaves keep their flavor best when they are stored whole and crushed just before use. When herb seeds are to be used for cooking, the seeds should be stored whole and ground up as needed.
Bag Drying
To prepare plants for drying, remove blossoms from the herb plant and rinse the leaves on the stem in cold water to remove soil. Allow plants to drain on absorbent towels until dry. Then place the herbs in a paper bag and tie the stems. Leave 1 to 2 inches of the stems exposed. This allows the plant oil to flow from the stems to the leaves. Place the bag in a warm, dry location. In about one to two weeks, when the leaves become brittle, tap them free of the stems and the leaves will fall into the bag. Store leaves in an airtight container away from the light.
Tray Drying
Clean herbs as for bag drying but the heavy stalks can be discarded. Put the leafed stems one layer deep on a tray in a dark, ventilated room. Turn over the herbs occasionally for uniform drying. The leaves are ready for storage when they are dry and the stems are tough.

Herb Gardening Perennial Information
Herb gardening is a vital and important part of perennial gardening. Herbs are after all, plants that gardeners have found a use for - medicinal, cosmetic or culinary or ornamental. It is the ornamental and culinary aspect that we want to focus on in these web pages. There are some great books on the cosmetic use of herbs for guys and I'll share some of my cooking recipes here on this site. Because I do like to cook with herbs as much as I enjoy growing them. My basil spahetti is famous (well, at least the kids really love it.) The recipe is here. Some of the best plants in the perennial garden are also considered herbs and their stories are found on the links below. While this is not a site about herbs, it is a site about perennials and herb gardening is a very important part of the perennial border. In general, there are a few things you need to know:
