Hanukkah e le Leggi per la Razza
1998 was the occasion for quite a bit of uncomfortable soul searching in Italy: It was the 60th anniversary of Mussolini's Leggi per la Razza, the race laws established to keep the Jews living in Italy from mingling with the "Aryans" of Italian stock. Over the space of a few short months in 1938 Jewish students and teachers were expelled from schools and universities, and Jews had their freedoms considerably curtailed those who had moved to Italy from elsewhere were expelled, while those born in the Peninsula were told, among other things, that they could no longer hold public office, work in banks, own radios, work in sensitive industries (such as aeronautics), practice medicine, intermarry with Catholics, or even have "Aryan" servants. It was a tremendously dark period, and those who could left for England or America often with broken hearts. Though individual non-Jewish Italians may have found the goings on repugnant there was no institutional objection to the establishment of the race laws, especially not from the Catholic Church, which, as a recent editorial devoted to this silence in

December 9, 1998 LOW-FAT POTATO LATKES 1 pound Idaho or russet potatoes, scrubbed but not peeled 1/4 cup chopped onion 3 large egg whites 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 1 tablespoon all-purpose flour Nonstick vegetable oil cooking spray 3 to 4 tablespoons olive oil (not extra-virgin) or vegetable oil Preheat the oven to 350 degrees. Grate the potatoes using a box grater or the grating disk of a food processor. Transfer the potatoes to a colander over a bowl and let rest for 30 minutes, until the potatoes have darkened. Rinse well in cold water to remove the starch and the potatoes turn white again. Drain very well. If the potato strands are very long (longer than an inch or so) chop them slightly in the food processor or by hand. Place the potatoes, onion, egg whites, seasonings and flour in a medium bowl and stir well to combine. Cover with plastic wrap and let sit for 15 minutes before cooking. Spray a baking sheet with nonstick cooking spray; set aside. Heat 2 tablespoons of the olive oil in a large, nonstick skillet over medium heat until very hot. Stir the potato mixture and, working in batches if necessary, drop the potato mixture by spoonfuls onto the hot skillet and shape them into circles (the pancakes will not be uniform in shape). Let the latkes brown on one side, then turn them over to brown on other side. Place the browned pancakes on a cookie sheet that has been sprayed with nonstick cooking spray. When the tray is full, bake the latkes, uncovered, for another 10-15 minutes until the potatoes are cooked through. Place on paper towels to absorb any fat and eat them while they're hot, with regular, low-fat or nonfat sour cream and regular or sugar-free applesauce, if desired.

"Hanukkah," they tell their children, "is all well and good, but it's not as important a holiday as Yom Kippur, Rosh Hashanah or Passover. It only gets a lot of notice because it falls close to Christmas." That said, the Goldberg kids, Samuel, Anna and Jacob, thoroughly enjoy themselves for those eight cold days. The two oldest children have made their own menorahs and like to count up their Hanukkah gelt (coins, in this case made of chocolate), play dreidel and help out with the cooking. Alisa and Harold always tell the kids the story of how during the Maccabean War, there seemd to be only enough oil to keep candles lit at the temple for one day, but instead it lasted for a miraculous eight. This gives us the eight days of Hanukkah and the symbolic use of oil in the meals.

Latkes light the way to the Hanukkah table Thursday, December 06, 2001 By Karen Novak When Hanukkah begins its eight-day run at sunset Sunday, three local women will be priming their fry pans for different versions of traditional potato latkes. "Hanukkah is one of our more minor holidays," said Raye Coffey, Monroeville. "Potato latkes are the featured dish on most Jewish menus at this time." Coffey says the many Jewish holiday cookbooks offer an array of latkes. "Designer latkes are now crossing our paths," she said. She received a copy of "Jewish Cooking In America" by Joan Nathan as a gift. "It contains some 'new wave' latkes that I'm going to try. Some years I do the traditional latkes, which are very basic eggs, flour, potatoes but when I feel adventuresome I like to try unusual ones with sweet potatoes, zucchini or carrots." THE STORY OF HANUKKAH A story to read King Antiochus of Syria was not a Jew, and he was very cruel and unkind to the Jewish people. He wanted the Jews to worship the Greek god Zeus, and wouldn't let them worship their own god at their temple in Jerusalem. This made the Jews very angry, and they decided to fight the Syrian King. Even though they were greatly outnumbered they won their battle. When they returned to their temple, they found that the army had made a terrible mess. So they had to clean it in order to make it holy once again. They did this by re-lighting the temple's candle called a Menorah. This candle was really meant to burn all the time. They could only find one jar of oil to light the flame, and this they thought would only last for one day. But instead it kept the lamp burning for eight days and nights. And so Hanukkah celebrates this miracle.
