For international cooking expert Joan Nathan, Hanukkah is a time of special celebration, accented with traditions the food, the multi-generational gathering of both family and friends and a time to be charitable to those less fortunate. Beef brisket is the traditional main dish for Nathan's Hanukkah dinner. My Favorite Brisket, from her cookbook "Jewish Cooking In America" (Alfred A. Knopf, Inc., 1998), redolent with red wine, herbs, onion and garlic is, well, her favorite. She says brisket is "comfort food, extremely favorable. Everyone enjoys it even the fanciest people love it." Why? Because of the bold beef taste enhanced by the ingredients that simmer along with it. As a bonus, it's easy to prepare and makes enough to feed a large holiday gathering.
Nathan cooks brisket in advance, then chills it overnight in the refrigerator. The flavor is at its best, she says, when it's made ahead. To serve, she skims the fat, slices the brisket and then reheats it along with the cooking liquid which doubles as a sauce. What to serve with brisket? Crispy Potato Pancakes are the traditional favorites for Nathan's family.

A Low-Fat Celebration of Oil
By Joan Nathan Hanukkah starts this year at sundown on November 29. It's a celebration of religious freedom, but also a celebration of oil and the miracle that provided light for the Jews for eight days instead of just one. It is the oil, not the commonly eaten potato latkes (pancakes) or soufganiyot (jelly doughnuts) that is symbolic at this celebration of freedom and festival of lights. The Importance of Oil Celebrating oil as a symbol of religious freedom dates back only twenty-two centuries, to 165 B.C., just after the Syrians had raided and damaged the Temple in Jerusalem. The Maccabees, the small Jewish army that had miraculously defeated the large Syrian one, returned to the Temple to repair it. According to the traditional story of Hanukkah, the Maccabees found only enough sacred oil, olive oil specifically, to light the menorah for one day. But, somehow, one day's oil supply lasted eight, and thus the oil is now symbolic of the cleansing and rededication of the Temple in Jerusalem. Hanukkah is celebrated for eight nights to commemorate this miracle.

When the sun goes down on Friday, November 29, Jews the world over will celebrate Hanukkah. The Festival of Lights brings special delight for children, but it's enough to give a cardiologist nightmares. For Hanukkah is unique among holidays in that its liturgy urges the consumption of fat. Hanukkah, of course, celebrates the victory of a small band of Jewish patriots over a mighty Syrian army in 165 BCE. When the Maccabees, as these freedom fighters were called, went to rekindle the holy light in their Great Temple, they found only enough oil to burn for a single night. A messenger was dispatched to a distant city to fetch more holy oil, but he was not expected to return for a week. It was here that the Hanukkah miracle occurred. The oil in the tiny cruet burned for eight straight days and nights, until the messenger returned. To celebrate, Jews light candles in eight branched menorahs and eat foods that are fried in oil.

The Jews under Judah Maccabee gathered an army of farmers and shepherds. They fought back Antiochus the Greek leader. When the Jews regained the temple, they only found one small container of oil. There was only enough oil to light the menorah for one day. The oil miraculously lasted for eight days and nights. Lighting a menorah, playing with dreidels and eating potato pancakes and donuts are traditional ways to commemorate the miracle of Hanukkah. Every night, Jews light a candle on a nine-branched menorah. People light one candle on the first night and an additional candle each following night. Fried foods like potato pancakes (latkes) and doughnuts are special treats this time of year. Parents give presents or traditionally coins and nuts to children. (CBS) When it comes to Jewish cooking, Joyce Goldstein is considered an authority. In her latest book, "Saffron Shores," she explores the flavors and foods of Jewish cooking in the Mediterranean. The Saturday Early Show gave her $60 to create a Hanukkah meal for six.
This year, Hanukkah starts Friday, Nov. 29. Many of the foods served during this period are fried in oil for symbolic reasons. The holiday refers to the battle in which the Macabees defeated the enemy and recaptured Jerusalem. Although the lamp in the Temple appeared as if it had enough oil for only one night, the oil burned for eight days. To celebrate this miracle, the candles of the menorah are lighted for eight consecutive evenings.

Algerian Potato and Cheese Pastries Fish With Sun Sauce Apricot Pudding Terminology: Swiss Chard: This is a member of the beet family. It's grown for its crinkly green leaves and silvery, celery-like stalks. The variety with dark green leaves and reddish stalks has a stronger flavor than that with lighter leaves and stalks. Swiss chard is available year-round but it's at its best during the summer. Select chard that has tender greens and crisp stalks. Chard is a good source of vitamins A and C as well as iron, and can be prepared like spinach.

''I was searching for Hanukkah on my calendar and couldn't find it in the month of December,'' says Jennifer Felicia Abadi, author of A Fistful of Lentils: Syrian-Jewish Recipes from Grandma Fritzie's Kitchen Who could have guessed that this year Hanukkah began in November the day after Thanksgiving? ''Can't we spread these holidays out a bit, it's not fair,'' Abadi says. Jayne Cohen, author of The Gefilte Variations , has no qualms about acknowledging both Thanksgiving and Hanukkah, even though they dovetail, because she sees parallels between them. ''Besides the fact that they are home-centered holidays, they share a spiritual connection, too,'' she said. The theme of both holidays revolves around deliverance from religious persecution. At Hanukkah, we recall Jewish resistance to Hellinzation after the Greeks attempted to crush our rituals and beliefs. At Thanksgiving, we pay homage to the pilgrims who fled England seeking a safe place to worship as they pleased. The holidays' close proximity poses logistical problems. Many Jews may wonder if it's respectful to celebrate this special Hanukkah Shabbat with their homes overflowing with pumpkins and rust-colored chrysanthemums

When I invited a friend to dinner last Friday to celebrate the first night of Hanukkah, she accepted with a caveat: she and her husband do not eat red meat. I said that I was making brisket, but would give them something else. "Oh, but we eat brisket!" she exclaimed. Almost everyone likes brisket. It is the perfect comfort food: fragrant, flavorful, and if you cook it right, fork tender. (I always have one on hand in the freezer.) In Eastern European Jewish homes, brisket was reserved for special occasions like weddings. In Texas, barbecue brisket is everyday food. A versatile cut, brisket can be simmered as a pot roast on top of the stove or cured and used for corned beef and pastrami. Brisket is the Zelig of the kitchen. It takes on the character of whoever cooks it. In the early part of the 20th century, when "The Settlement Cook Book" reigned supreme in American Jewish households, recipes for savory briskets of beef with sauerkraut, cabbage or lima beans were the norm. As tastes became more exotic, cranberry or barbecue sauce, root beer, lemonade and even sake worked their way into recipes. "My mother always sent me to New York with a huge brisket with gravy frozen in," recalled Eli N. Evans, the author of "The Provincials," who was born in North Carolina.

Pot Roast with Savory Vegetable Gravy
(makes 8 servings)
olive oil cooking spray 4-pound (1.9 kg) rump roast large onions, 1 pound (480 g) total, sliced garlic cloves, peeled whole clove bay leaves, broken in half teaspoon (5 ml) crushed dried thyme carrot, 2 ounces (60 g), peeled and sliced rib of celery, 2 ounces (60 g), chopped cups (720 ml) fat-free low-sodium beef broth freshly ground pepper Preheat oven to 325°F (160°C). Lightly spray an oven-proof covered roasting pan with cooking spray. Brown the roast on all sides over medium-high heat. Surround the roast with the onion and garlic. Add the whole clove, bay leaves, thyme, carrot, celery, and beef broth. Bring to a simmer on top of the stove. Cover and place pan in the oven. Roast until the beef is fork tender, about 3 1/2 hours. Remove the roast and let stand on a carving board, covered with a sheet of aluminum foil for 15 minutes before slicing. Transfer the vegetables and pan juices to a large strainer; discard the clove and bay leaves. Using the back of a large spoon, force the vegetables through the strainer to thicken the pan juices to make a gravy. Remember to incorporate the brown caramel colored bits around the sides of the roaster. Remove and discard any visible fat. Place the gravy in a saucepan and heat, stirring until thickened and smooth. Season to taste with pepper. To serve, slice the pot roast into thin slices against the grain and nap with the gravy.

Faced with this dilemma, I asked a cantor friend why Hanukkah was so early this year. "Because the Jewish calendar is lunar, each month has 29 or 30 days," said Cantor Maurice Singer of Adas Israel Congregation in Washington, D.C. "The solar, or Gregorian, calendar has 30 or 31 days." In order to catch up, the cantor said, instead of a leap year with one extra day, we have a leap month every few years.
