Popcorn Balls for Halloween (or anytime...)
Ingredients:
  • 1 cup popcorn, popped
  • 1 cup white sugar
  • 1 cup corn syrup
  • 1 small box jello - orange or berry black
Mix corn syrup, sugar and jello bring to a rolling boil and pour over popcorn. Stir to mix well and when cool enough to handle form into balls with well buttered hands. Each recipe makes about 20. As you hollow out your Halloween pumpkin, set aside seeds so you can roast them. They make a tasty snack treat!
  • Wash the seeds and pat them dry.
  • Soak for about an hour in soy sauce or Worcestershire sauce (you might want to try a batch of each just to see which you like better).
  • Sprinkle w/ garlic powder if desired
  • Some variations, soak in butter instead of the soy or wooster sauce. Sprinkle with a few Italian spices - oregano for instance. Experiment until you find a flavor you like!

Traditionally, Halloween is believed to be the day when the dead spirits rise from their graves and come back to inhabit bodies of the living for the next year. To discourage the spirits, the living would dress up in ghoulish costumes and run around the town creating havoc to drive the spirits away. The tradition of pumpkin carving is said to have come from the Irish folklore. A man named Jack is said to have trapped the devil up a tree by carving a cross into it. Jack then made a deal with the devil to never tempt him again, and he would let him go. When Jack died he was denied access to heaven and hell, but he was given an ember to light his way through the frigid darkness. It was placed in a carved out turnip to keep it burning longer. Thus, the Jack-o-lantern was born. When the Irish moved to America they discovered that pumpkins were more plentiful than turnips and easier to carve. This evolved into the tradition we have today. When the pumpkin-carving is done, save the seeds to make a Halloween favorite, toasted pumpkinseeds, or cockroach shells. You could have cookies baking in the oven while you are carving pumpkins or, for the younger children, have them help you make some of the cookies suggested below while the older kids do the carving.

    It's October, and the daytime sky is bluer than it has been all year.  But at night... oh, at night....  "Ghosties and ghoulies and long-legged beasties, and things that go bump in the night...." Halloween is coming fast.  The stores have been displaying Halloween inventory for weeks.  It is time for ghosts, spirits, witches and black cats to come out of their places again.  Halloween became a part of Christian celebrations more than 1000 years ago, when the Roman Catholic Church named November 1 All Saints' Day.  The night before the holy day became All Saints' Eve, All Hallows Eve, and finally Hallowe'en. Halloween became the last chance for evil and mischievous creatures to to have a hand in prowling and prank-playing. Long before Christianity became the religion in France and Britain, early Celts feared when winter came that the sun would be killed by the powers of darkness.  The Celts believed that ghosts, spirits, witches and goblins walked the earth on Halloween, and that cats were sacred creatures who had been changed from human form as a punishment for evil deeds. Those folks took the whole concept very seriously.  Nowadays, it has a lighter theme.

  • 3/4 cup crunchy peanut butter
  • 1/3 cup water
  • 2 eggs
  • 1 chocolate cake mix
  • Red Hots Method: Pumpkin-Patch Halloween Cake Ingredients:
  • Cake Ingredients -
  • 1 yellow cake mix
  • 3/4 cup unsalted roasted peanuts, chopped
  • 1 cup water
  • 1/3 cup oil
  • 2 eggs
  • Topping Ingredients -
  • 1 can Vanilla Frosting
  • 1/3 cup peanut butter
  • 1/2 cup unsalted roasted peanuts, chopped
  • 1 small Butterfinger bar, chopped
  • 16 candy pumpkins Method: Preheat oven to 350 degrees. Grease and flour 9" x13" pan. In large bowl, combine all cake ingredients. Mix with electric mixer on slow speed until there is no powder visible. Pour into prepared pan. Bake at 350 degrees for 30-40 minutes, or until toothpick inserted in center comes out clean. Cool completely. In medium bowl, mix frosting and peanut butter until smooth. Spread evenly over cake. Sprinkle with peanuts and candy bar. Arrange candy pumpkins on cake.     "Nine out of every 10 teenage girls do not get the calcium they need in their diet. Without adequate calcium intake during their teen years these girls are placing themselves at risk for bone fractures now and osteoporosis later in life. A Salt Lake County 4-H foods club, called "That One Club," is doing something about it. During the month of October they have been studying dairy foods and how dairy provides 75% of the calcium in our diet. As a project, 11 year old Jane Lloyd and Mary Ungricht created Halloween recipes, which supply the calcium they need and provide the fun and taste teenagers look for. " Pizza Fondue in a Pumpkin Shell - by Jane Lloyd Ingredients:

  • 1 small pumpkin
  • 2 1/2 cups pizza sauce
  • 1 teaspoon Italian Seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • various bread cubes or sticks and Halloween shapes cut from bread, etc Method: Cut jack-o-lantern top on pumpkin, remove seeds and fiber, and clean. Replace top on pumpkin and place hollowed out pumpkin on a baking sheet in a 350 degree oven for 45 minutes. This will partially cook pumpkin and serve as a hot holding container for the dip. Combine pizza sauce, seasoning, and cheeses in a small sauce pan. Heat through. Pour dipping sauce in hot pumpkin. Serve with bread cut in Halloween shapes as well as with bread cubes and bread sticks.

With a few of these Halloween hints, you'll be the hit of the neighborhood this October. Kids will be talking about your ghastly gruesome goodies for years to come. Halloween Basics Armed with a few bottles of food coloring (the gel or paste varieties work best), a good cut-out cookie recipe (try Child-Proof Sugar Cookies ,) some cookie cutters, and a few basic frosting recipes (try Royal Icing Sugar Cookie Frosting or Really Good Frosting ) you too will be able to turn your kitchen into a baking cave of horrors. Cookie shapes Try bats, cats, witches, ghosts, jack-o-lanterns, pumpkins, leaves, acorns, full moons, broomsticks, cauldrons, martians, spiders, eyeballs, tombstones and any other spooky shape that you can come up with! Cookie colors Add gel or paste food coloring to any basic rolled sugar cookie recipe. Orange works great and pumpkin shapes are really easy to do. Add black gel food coloring to your dough for bats and black cats.

    A fun Halloween treat or tradition - meatloaf baked in a jack-o-lantern! Recipe serves 4 4 small pumpkins
    1/2 pound country sausage
    1/2 pound lean ground beef
    1 clove garlic, or 1/8 tsp garlic powder
    1 teaspoon beef bouillon granules
    1 egg
    1/3 cup milk
    1/4 teaspoon Worcestershire sauce 1/8 teaspoon pepper 1/2 cup bread crumbs Wash pumpkins and cup top off (keep top). Clean out seeds. NOTE: Any meatloaf recipe maybe used for this dish. Combine all ingredients except pumpkins and mix well. Place mixture inside pumpkin shell, replace top. Place stuffed pumpkins on a pan with a little water in it or place a pan of water on the cooking rack below the pumpkin. Bake at 350 degrees for 1 - 1 1/2 hours. If larger pumpkins are used longer baking time will be required to cook meatloaf to a safe internal temperature of 155 degrees. To serve, cut pumpkin in half, place both halves on serving plate.
