ANSWER If you look at the serving suggestion of the alleged fat free cookingsprays, most say something like .o3 seconds of spray or something like that.
http://www.robgoodwinfitness.com/rgfc_003.htm
QUESTION:
Hi, my name is Allison Berry. I have just finished reading your book. I just had a quick question about how to prepare the food. Am I allowed to add the fat free sprays to my food? What are some different ways to prepare chicken and not run into sugars?
Thanks,
Allison
ANSWER :
If you look at the serving suggestion of the "alleged" fat free cooking sprays, most say something like ".o3 seconds of spray" or something like that. In other words, you can't even get your finger off the button in time to only spray that much.
The "fat free" cooking spray can only be described as fat free because of a loop hole in the FDA labeling laws. The law says that anything that has less than a half gram of fat "per serving" can be called fat free. Most of us put about 10-20 servings on a pan to keep our food from sticking. There is no way to miraculously "extract" the fat from pure oil. The oil in those cooking sprays is still 100% pure FAT! In short... we're being scammed.
However... PAM has released a new Olive Oil spray that I would assume is okay. But I personally always use pure extra virgin olive oil on my pans, or wipe down my grill with olive oil before I spark it up. Pure olive oil as you know is a clean, essential, "good" fat that the body needs and will not hamper body fat disposal when used in moderation. I try to add some olive oil, or flax seed oil into my diet daily.

Mastering Fat Free Cooking
Who says you can't have your cake and eat it too? If you know the secrets of fat-free cooking, you can have just about anything you want - deceptively rich cheesecake, creamy Fettuccine Alfredo, crispy Cajun chicken, cheese-filled lasagna, hearty Western omelettes, luscious quiches, and much more.
Baked Chicken With Garlic and Sun Dried Tomatoes
4 boneless skinless chicken breast halves (4 ounces each)
20 cloves garlic, peeled which is about 2 heads)
1 medium onion, sliced 1/4 thick and separated into rings
1/2 cup chopped sun-dried tomatoes (not packed in oil)
1/4 cup dry white wine
1/2 cup chicken broth
1 teaspoon dried oregano
1/4 ground black pepper
Serves 4 (As the garlic cloves cook, they become sweet and mild. For a real treat, spread the cloves on hot French bread instead of butter). 1. Rinse the chicken, and pat it dry with paper towels 2. Coat a large ovenproof skillet with olive oil cooking spray, and preheat over medium-high heat. Crush two of the garlic cloves and place them in a skillet. Place the chicken in the skillet and arrange the remaining garlic cloves around the chicken. 3. Cook the chicken two minutes on each side, or until the chicken and garlic cloves are nicely browned. Remove the chicken from the skillet, and set aside. Remove the skillet from the heat.

Fat Free Cooking
For most of my adult life, I have been suffering from a lack of energy. The first breakthrough came when I discovered the evils of excess sugar (and other simple carbohydrates). I decided that I had a moderate case of relative hypoglyemia, caused by excess sugar consumption in childhood. Here are some books I have read on the subject: "Hypoglycemia, A Better Approach" , Airola P, Health Plus, Phoenix 1977. ISBN: 0-932090-01- X. Dr Airola has written many other books, with such titles as "How to Get Well", and pushes the idea of natural foods. In his opinion, ordinary milk from the grocery store is unfit for human consumption. "The Hypoglycemic Connection" , Samra G, MINT Enterprises, Sydney 1984. ISBN: 0011-1- 602-9920589. Somewhat technical. "Low Blood Sugar" , Budd M L, Thorsons Publishers Limited, Wellingborough 1981. ISBN: 0- 7225-0589-2. After one week on a low sugar diet and some exercise, I felt fabulous; full of energy. Alas, it did not last, and I have not been able to recreate this state of energy. Many years later I read a sequel to the classic Pritiken book: "The Pritikin Programme for Diet and Exercise"

I Know What I Should Eat . . . But!
by Phil Kaplan
If you've been with me for any period of time, if you've been a regular listener of my radio show or you've attended any of my seminars, you know. If you want to boost metabolism, if you want fuel for consistent energy, if you want the raw material from which to build new healthy muscle tissue, you want to eat Supportively. But . . .
Sometimes I stumble upon words that just express a concept or idea so well they combine to become a component of my vocabulary. The words Supportive Eating have found their way into my regular dialogue. I coined the term more than 10 years ago and it stuck because it says exactly what it purports to say. Eating Supportively translates into, "eating in a manner that works to support your metabolism and your fitness goals." Disciples of Supportive Eating know precisely how that term translates into food. For those who may be new to the concept, and as a refresher before I go beyond the basics, allow me to summarize the "wants" of Supportive Eaters.

Low-Fat and Fat-Free Cooking
The Faithful Reader has received the wake-up call about calories, cholesterol, and other enemies of middle-aged health and well-being. These are some sources that have helped her eat wonderful food while she's taking better care of herself. Brand Name Fat-Fighter's Cookbook Secrets of Fat-Free Cooking Fat-Free Holiday Cooking , and Secrets of Fat-Free Baking by Sandra Woodruff provide plenty of information for people who are making diet changes. It doesn't hurt that the recipes are fairly easy to follow and good Jane Brody's Good Seafood Book with Richard Flaste. Ms Brody makes a good case for omitting nutrition information that is the stock-in-trade of so many other cookbooks, so consider yourself warned if such numbers matter a great deal to you. These recipes are healthy, delicious, and, for the first time in the Faithful Reader's rather long and mostly unillustrious culinary career, she knows what to do with all kinds of fish. Patricia's Pretty Good Shrimp was adapted from this book. C'Mon America, Let's Eat
