If a recipe calls for margarine use it to grease the bottom and sides of the saucepan. Always blend the mixture together thoroughly before placing it into the saucepan. The temperature rises very quickly once it begins to bubble, so keep a close watch that the mixture does not stick or burn. Do not stir the candy while it is cooling down. Drop a small amount of candy from a spoon into the cold water. As the drop of candy cools down you should be able to tell if it is thread like or lift it out and look and feel the drop of candy to see if it is hard or soft to the touch.

CREAM CANDY.Take four cups of sugar, two cups of water, three-quarters of a cup of vinegar, one cup of cream or rich milk, a piece of butter the size of an egg, two teaspoonsful of vanilla, and a pinch of soda; let it boil till it cracks in water, then pour into buttered tins, and when sufficiently cool pull or work up until very white. CHOCOLATE CARAMEL.Take one-half cup of grated chocolate, one cup of warm water, three-quarters of a cup of butter, and two cups of sugar; let it boil without stirring until it snaps in water; pour this into a buttered tin dish, and let it stand until nearly cold; then by taking a table-knife and dipping it into butter, you can cut into blocks of any size you wish. The meat of any kind of nut, cut up fine, can be added to this just before pouring into the tins. VANILLA CREAM.Three cups of sugar, one and a half cups of water, one-half teaspoonful of cream tartar, a piece of butter the size of a walnut, flavor with vanilla; boil until it begins to thread or harden in cold water, and pull when cold.

Consumers demand taste, convenience and health benefits from food products, and sugar-free hard candies can offer all three. Originally, sugar-free hard candies were individually wrapped. Formulations have been developed with optimised maltitol syrups (C Maltidex) offering a very good workability to the confectionery producer. Innovations in packaging have led to the introduction of pocket size boxes. Since the candies are now often packaged unwrapped, stability of the candies is essential to avoid stickiness once the box is opened. Cerestar, the world's leading producer of starch-derived ingredients for the food industry, offers isomalt powder and liquid specifically for the manufacture of sugar-free hard candies. The making of hard candies Hard candies are basically very high dry substance liquids, consisting of sweeteners (traditionally sugar and glucose syrup) which are cooked to remove the majority of their water and then cooled to form a stable "glass". Acids, colours and flavourings are added after this stage. The sucrose is prevented from crystallising on cooling by the addition of glucose syrup, known as "doctoring syrup".

In a 1 quart glass jar, layer the ingredients in the following order: Flour mixture, walnuts, 1/2 cup of the mini candy coated chocolates, oats, remaining candies, and brown sugar. pack down well after each addition and attach a tag with the instructions. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a large bowl, cream together 3/4 cup of butter, 1 egg and 3/4 teaspoon of vanilla until light and fluffy. Stir int he contents of the jar until well blended. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

    Aniseed Brittle
    Ingredients 4 heaped tbsp honey
    1 tbsp crushed anise seed
    Bring the honey slowly to a boil in a heavy pan and simmer steadily for about 30 minutes, OR until a drop in cold water becomes immediately hard. Stir in the anise seed. Pour onto an oiled marble slab or baking sheet. Mark into squares and store when cool.

    The original recipe was taken from a very old apothecary book. The product equates to today's chewing gum. The powdered ingredients were added to white wax and formed into balls. As most of these botanicals are strongly flavored there is very little of them needed for the chewing balls. Following are 4 different versions.
  • Equal parts of Gum Mastic and Ginger
  • Equal parts of Cubebs and Nutmegs
  • Equal parts of Ginger, Rhubarb, Mastic, Pellitory and Orris
  • Angelica root alone
    Coriander Butterscotch
    Ingredients 1 cup butter 2 and 2/3 cups brown sugar 1 tbsp crushed coriander seeds Melt butter in heavy pan. Add sugar and lemon juice and stir over low heat to dissolve. Boil fast till drop becomes brittle in cold water. Stir in coriander seeds. Pour onto oiled marble slab or baking sheet. Mark into squares and cool.
  • 20. Brazilian Docinhos: Doces De Castanha Do Pará (Brazil Nut Candy)
    Requires minimal cooking.

    One more party recipe, also easy to make. Don't forget to get pretty paper cups for these too! Better stock up on those, there are so many similar recipes... 1 can sweetened condensed milk 1/2 lb finely chopped Brazil nuts 2 Tbsp of unsalted butter or tub margarine (you can use only 1 Tbsp and it will still work out) 2 heaping Tbsp of Nestlé Quick or 1 Tbsp of Quick and 1 of Hershey's Cocoa. In a heavy saucepan mix chocolate with condensed milk and nuts and add the margarine. Cook in low heat stirring constantly until you can see the bottom of the pan. Continue to stir for another two minutes. Pour onto a plate and let cool completely before you form the little balls (I usually leave it in the cupboard until next day). Butter your hands slightly to form the little balls. Roll the balls in chocolate powder or jimmies and put them in small paper cups. Maria's Cookbook
