Classic cooking made easy!
I have never tried cajun cooking but after watching Lucy's show I wanted too! I ordered her book, and every recipe I've tried is mouth watering delicious! My kids will now eat "greens" because they are absolutely to die for. Ingredients are few, directions simple, and every single recipe turns out perfect! Lucy's book has put excitement into our meals again. You must try her book to believe everday, ordinary food, can be so delicious!

A true "cajun" cookbook!!
This book is a treasure! I am from Southern Louisiana but now live in Colorado. I never really wanted to learn to cook when I was young, but now that I am older and a mom I want to pass on my heritage to my children. This book is very authentic. It is exactly like my mother cooks--with no weird ingredients. The recipes are fantastic and the commentary witty. It also has a glossary for those persons who don't understand some of the cajun terminology. This book was my "early" Mother's Day present. And, I couldn't be any happier.

Excellent and True
I have been cooking cajun foods for over 40 years and my mother before me.This book is so true to the authentic "French" cajun cooking found in homes in and around Lafayette, Louisiana that I sometimes am surprised at its accuracy.I watch Miss Lucy on PBS and this book follows her show.I just purchased two more books as gifts for my children and will give it to them as the truest representation of the preparation and enjoyment of "French" cajun cooking. Frank Davis Cooks Cajun, Creole, and Crescent City
I purchased this for my sons. The book is great for the young male wanting to cook but not wanting or knowing some of the terms or complications of cooking. Simple, easy recipes.

Authentic N.O. flavor
I'm a born and bred New Orleanian. I recently borrowed this book from someone and I think it's a great cookbook, so I am here on Amazon to buy my own copy. The one star reviewer obviously just has it out for Frank Davis, looks like the same reviewer panned Frank's other cookbook. Frank is a flamboyant celebrity...like him or not, but at least try his recipes before panning his book!

a fake blowhard
fried flounder?I don't think so, that is considered a capital crime in New Orleans, where no one says "Nawlins" outside of phony jackasses like Frank Davis.Avoid this book, this is strictly for tourists and idiots, and meant to sell his line of "Nawlins" seasonings, which no one uses but him.

Simply great!
Very excited to see this book exists -- I've been thinking about writing my own to fill the void of Vegan (or almost-vegan in this case)Cajun Cookbooks. It's not fancy, but includes many of my favorite dishes, and things I can't wait to make that I haven't had since before I could cook for myself. This book is humble, as is the cuisine, not to be confused with New Orleans' flamboyance.

Classic Cajun modified to be meat-, dairy-, and egg-free
Although this book is already eight years old, it is a new favorite to me since I just bought it. Being a vegetarian, until I found this book, my experience with Cajun cooking has been limited to an occasional Red Beans and Rice. Now I am happily preparing Jambalaya, Courtbollion,and Gumbos that are vegan and low in fat.

Never having been pleased before with recipes for vegan cakes, I have to caution the reader that I haven't ventured into the dessert section at the back of the book. Some vegans may find the use of honey as a sweetener a problem and want to make substitutions.

The breakfasts, main dish and side dish recipes are wonderful, and have given me the courage to read non-vegetarian Cajun recipes with an eye as to how to adapt them to my diet.

Fantastic addition to my kitchen!
This book is very complete and has lots of vegan breakfasts as well as main meals. Preserves and baking is included as well. Sure is a great way to spice up a veggie menu!

A useful intro to vegan cajun cuisine
This book gave me some idea of how to serve up food with Cajun flavors but minus the meat and dairy.This book could have been jazzed up a little more though.

Neither imaginative nor attractive.

If you like to cook and enjoy delicious food, you will love this easy-to-read, cookbook, "In the Kitchen with Papa Wiltz."The recipes are very easy to follow, and written in a very organized manner on each page. Inspiration
Having been raised north of I-10 and not needing help with my cajun cooking, I love to read cookbooks all the same, even though cooking is not one of my favorite chores.Cajun Cooking For Beginners has inspired me to cook some of the old favorite dishes, using it's recipes for reference.My family thanks you.

A good book for **BEGINNERS**
The other reviewer completely missed the point. This is a starter's book, of course it will seem basic to someone from New Orleans. I was also raised in New Orleans, and,like most people here, I was raised cooking. However,those poor souls raised north of I-10 need some help. Ms. Bienvenu is awell respected culinary writer in the New Orleans area, and offers solidadvice to the uninitiated.

Being born born on the Bayou doesn't mean she can cook
I don't know where this woman learned to cook, but she sure needs to go back to school.I was born and raised in New Orleans and went to college in Lafayette, Louisiana so I know Louisiana cooking. Her recipes are trite and unimaginative. Do yourself a favor and buy a cookbook ....Save your money and avoid indigestion, don't use this book.END ... Read more
